Mexican food lovers prepare your taste buds for a new line of fresh, flavorful food. A leader in the expanding group of “fast-casual” restaurants, Baja Fresh Mexican Grill, will have its grand opening today at the Olentangy Plaza at the corner of Olentangy and Bethel Roads. With an average total check price of $5 to $6, Baja Fresh offers large portions at low prices. The food is authentic, stemming from old family recipes out of Mexico. Baja Fresh does not use any microwaves, freezers or can openers to assure that all the food is prepared fresh everyday.Erica Ficher, a senior art major, joined in the pre-opening celebration yesterday. “The food is delicious. It is served in large portions and tastes fresh,” she said.Baja Fresh began its business in Ventura County, California. Since then, it has expanded to more than 60 locations throughout the country. Ross C. Farro, chairman and CEO of Baja Limited in Cleveland, said the company plans to introduce 12 to 15 more restaurants in the area over the next few years. “Our goal is to open one per quarter year. We will be opening (restaurants) at Polaris, Easton and Fiesta Lane between now and February 1, 2001,” Farro said.The “fast-casual” restaurant trend thrives on the idea that people want the convenience of a fast-food restaurant with the quality of a casual dining atmosphere.”Baja Fresh’s idea is to offer high quality, fresh-made high profile food in a convenient format,” said Patrick C. Burns, part owner and chief operating officer of Baja Fresh.The menu includes a variety of familiar Mexican fares, like burritos and tacos mixed with exotic items, such as the “chilito” and the “torta.” The fish taco, the restaurant’s signature dish, is prepared with breaded snapper, shredded green cabbage, salsa, tangy dressing and a wedge of lime. The chefs prepare each dish to order, open-kitchen style, while the customers watch. Greg Cooper, a resident of Columbus who recently moved from California, said he used to frequent the Baja Fresh in his area. “When I moved to Columbus, the only two things I missed in California were the food and weather. I used to eat at Baja two to three times per week. It is hands-down my favorite Mexican restaurant,” Cooper said.For special occasions, Baja Fresh offers “party packs,” serving large proportions for private parties or business functions. They also offer a call-ahead option for to-go orders.Baja Fresh Mexican Grill opens for lunch today at 11 a.m. Regular hours of operation are 11 a.m. to 9 p.m., seven days a week.
